The cuisine by Daniele Raimondi, who sharpened his skills under Alain Ducasse, is illuminating the ground floor restaurant of this contemporary hotel (Le Morgane) with its mineral dining room (brightened up by touches of yellow and wooden accents) and a terrace that gives out onto the avenue (and the Aiguille du Midi!). Featured on the unbeatable lunch set menu: four adorable agnolotti made with chestnut flour dough, stuffed with red kuri squash and fried sage leaves; a thick slice of roasted free-range pork filet mignon, contrasted with a dark jus de viande, plus a bright beetroot purée, diced beetroot served in an aesthetically pleasing pink bouillon; and a classy tiramisu encircled by chocolate and topped with mascarpone mousse, with a roasted coffee ice cream center for dessert. // Damien Sorin
