Guillaume Gay and Émilie Saint-Amand first crossed paths at Le Bon Georges… and haven’t parted ways since! The result of their Rencontres? This bistro where little – if anything – has changed since its previous life as the restaurant Pouzenc: exposed wooden beams, patterned tiles, marble-topped tables… Meanwhile, in the kitchen, whose irresistible aromas waft all the way out to the street, Émilie prepares chic, classic dishes – starting with an unbeatable pâté en croûte (the night we went, it was made from a mix of pork, chicken and apricots). To go with that? A generous veal tartare jazzed up with black olives, Corsican brousse cheese and scallions; slow-roasted red onion with smoked paprika, served with bulgur wheat and Parmesan cream; and a rhubarb and allspice clafoutis, which we skipped, since we just couldn’t eat another bite! At lunchtime, the set menu leans into terroir-heavy classics, like oeufs mayo or terrine de campagne, roast pork with mashed potatoes, and chocolate mousse. // Maria Hamonic
FEELING THIRSTY? : Choose from around 140 labels of mainly natural and biodynamic wines, like a Burgundy melon from the Domaine Complémen’Terre (€8 a glass), or a pinot noir by Jérôme Litré-Froment (€40 a bottle). There’s also a (non-alcoholic) IPA Soda by UMÀ (€6.50 for 330 ml).
