In the densely populated world of Parisian bakeries, Kamel Saci (ex-Éric Kayser) has managed to carve out a beautiful slice of the pie for himself. In his vibrant 9th arrondissement den, tourists relax on the terrace while enjoying a perfect Franco-New York-style breakfast, and hurried Parisians pop in for a quick cardamom roll and a flat white before hitting the road again. Here, nothing is set in stone, much like the owner’s journey, who flitted around between Great Britain, the US, Brazil and Spain before settling down in France. As for the breads, the selection is consistently excellent and often sourdough: a mouthwatering buckwheat Coeur loaf, a Saint-Augustin made with T110 and rye flours, a comforting rye Vollkornbrot, or perhaps a seeded spelt wheat, honey and fig loaf… And the window displays are filled with buttery viennoiseries and top-quality pastries. // Sofia Sétif
