In the dazzling Buttes-Chaumont neighborhood, this quality bakery filled a gap in the market! Vanessa Dezallé, a newly converted neo-baker, noticed a bread desert and opened up a place where she could work her natural sourdough starters and exceptional flours from Lozère. Ever since, the magic of heirloom flours has been enchanting everyone who steps through the blue door of this new neighborhood institution. Here, each day is dedicated to a different type of bread: on Mondays, it’s khorasan, on Tuesdays, it’s whole wheat, on Wednesdays, it’s chestnut flour and T80 flour loaves, and on Thursdays, it’s “bread of the day,” while Fridays are dedicated to rye (€9.45 to €11.60 a kilogram). The sweets are also a major selling point: chocolate-hazelnut babka, cookies, apple cake and cinnamon rolls… (€29.90/kg).
