Florian Cadiou, the owner of Le Vins des Pyrénées, has placed his bets on the upstairs level of his lovable cocktail bar, the 1905. There, in a pre-war atmosphere (dark wooden cabinets, vintage lamps, almond-colored walls and a miniature heated terrace), Adèle Fardeau (ex-Mandarin Oriental) unveils her menu composed of eight cocktails. Subtly altered classics like the A Rebours (a sort of Old Fashioned made with rum, angostura, mint bitters, lime and soda water) rub shoulders with some sharp new creations, like the delicate liquid treat named Zelda – vodka, Chambord, cranberry juice, homemade hibiscus syrup, lime, ginger beer and egg white, for €13. Prohibitionists will opt for a mocktail, but they don’t come cheap (10€!), even if they are good quality, like the André – cucumber, lime, mint and ginger beer. For a bite to eat, grab a platter of beef cecina or Beaufils cheeses (€12). // A.B.
