Naked stonewalls, a dark wooden bar, industrial barstools, leather armchairs…. Of the Marais bars, this Brooklynesque bar has the upper hand. The first baby of Amaury Guyot (trained by the Experimental Group, who then went on to be the papa of Dersou), the Sherry Butt is perfection: glasses kept in the freezer, ice cubes cut according to the cocktail and the glass shape, carefully selected ingredients, clever recipes. On the menu written out in crayon behind the bar, there are quite a few handsome finds like the Laid (calvados, chai tea syrup, bitter vanilla and lemon, for €13) or the Ronin, made with Nikka whiskey, dry Madera with pandan leaves, Oloroso sherry and Champagne syrup. Alcohol-free recipes upon request (€8) and a beautiful snack menu: platters of Bellota ham to share (€20), homemade tartines (€8-12). // A.B.
