With its enormous Chesterfield couch, hip-hop music, framed street art and (female) bartenders wearing men’s underwear and bowties, the Calbar has established itself as a respectable neighborhood cocktail bar, neither stuffy nor hipster, but oh how talented with a shaker! Picked out from around twenty different creations: a very caliente Calavera (red chili-infused tequila, Vida mezcal, red pepper syrup and egg whites, €12) and a very sweet Basilou (basil syrup, lemon, peach syrup, ginger ale, €8). For a bite to eat: platters of Ibérico Bellota chorizo (€11). // A.B.
