After the runaway success of butcher-charcuterie Billot Club, meat obsessives and undisputed kings of the sausage roll Victor Katchoura and Augustin Savouré decided to switch things up, opening this sandwich shop-cum-deli at the foot of Montmartre, which moonlights as a café by day. For those still shaking off a late Sunday morning fog (us included), the trio has got you covered: granola to set you on the straight and narrow; full-on comfort with a croque-monsieur made from brioche and stuffed with a gloriously oozy, cheddar-heavy bechamel; a trout gravlax bagel; an egg bun with cheddar and bacon; a textbook American-style BLT on toasted white bread slathered in yogurt sauce and a sprinkling of chives; plus slow-cooked staples galore (lasagna, sausage and mash, veal stew). Get your greens with various small, but satisfying salads, like coleslaw, smoked potatoes or endives with blue cheese and walnuts. And before you leave, stock up on goodies including fennel sausage rolls, a slab of Augustin’s homemade pâtés and a tight edit of pantry heroes, like Catalan vermouth from Sagí Taverna, Martin sauces and Nomie spices. · Maria Mariaux
