There are certain places where we’d happily take out a membership card if we could… Like Ed’s, for example, named after owner Édouard Thomas, who transformed his former Buffet Local into a bakery/sandwich shop. There, François Massonnet (ex-Fournil Éphémère in Montreuil) bakes the bread, made using organic flours from the Ferme d’Orvilliers and Le Moulin Pichard. The space features tomette tile floors, Formica furniture, a long wooden bar, and a bread oven in the basement. And at the counter? Mouthwatering sourdough spelt baguette sandwiches stuffed with baked ham, salted butter and cornichons, or artisan sausage and cheddar hot dogs with ketchup and mayo, which pair perfectly with some roasted zucchini or fermented pickled vegetables. Plus, all the butters, smoked goods, sauces and pickles are made in-house – see if you can spot the smoker in the corner of the shop. And since we like it so much here, we’ll be back on Thursday nights from May to October for the pizza and beer nights. // Pétunia Lipari
