With a name like Incorrrect, purists should know what they’re in for! At their bistro-like haven with exposed brick walls and parquet floors, Estelle and Alexandre Hocquet (who used to work at L’Air du Temps in Éghezée) are playfully rewriting the rules governing traditional Italian pizza-making, with a very rock-heavy soundtrack playing in the background. But that doesn’t mean they’re skimping on quality: the dough, made with a sourdough starter and left to rest for 48 hours, gets topped with eight seasonal flavor combos. Among the creations served on beautiful ceramic tableware by Céramifoux (Alexandre’s uncle) the day we went for lunch, we opted for a bold Magic Mushrooms pizza combining smoked scamorza, mushrooms, chimichurri, pickled onions and a crispy bread tuile, along with a rather aptly named Scandale, featuring brie, creamed celery root, pine nuts, fried capers, watercress and smoked pineapple – a stroke of genius! But classic food lovers need not fret, the duo also serves much more standard fare, including the Margherite or the ’Nduja pizzas. And if you want to go all out, there’s an incredible red kuri squash and passion fruit crème brûlée… We’ll allow ourselves one mamma mia! // Giana Parmi
FEELING THIRSTY? Each pizza has a suggested drink pairing, from the 3 Fonteinen oude gueuze (€10 for 375 ml) for the Margherite to the Touch of Sun IPA (€6.50 for 330 ml) for the Scandale. There are also a dozen natural wines to choose from (a Catalan xarello by Sin Project at €32 a bottle, a Puglian primitivo from La Tenuta Cacascola at €36), along with homemade apple and elderflower kombucha (€6 a glass) and Liège-made lemonades by Sowa (€3.80 for 250 ml).
