Krampouz billigs hotplates, sacks of flour and the sweet smell of salted butter – for a minute there, we could have sworn we were in Brittany. Except that this is KRAZ, which means “crispy” in Breton, all dressed up with lush greenery and traditional interiors given an industrial twist. Here, Ellen Maeyens and Eli De Heem (La Cena) bang a drum to the changing of the seasons, following their culinary cravings using locally-sourced produce. The menu features buckwheat galettes with a never-ending combination of ingredients: the Complète with local Pas de Rouge cheese from the Het Hinkelspel cheesemongers, ham, egg and freshly picked herbs; the Flamande stuffed with asparagus, egg and parsley; or the Saumon with salmon gravlax, apple, cream and dill. Plus, crepes for those with a sweet tooth: salted butter and almonds; lemon curd and meringue; saffron cardamom butter, pistachios and orange blossom water. FEELING THIRSTY? Just like in Brittany, there’s hard apple cider (€4 a glass) or Cask Obligatoire from Lemasson, aged in Calvados barrels (€33 for 750 ml). Otherwise, Lambiek Fabriek gueuze (€11.90 a glass) or homemade lemonades (€4.50 to €4.70).
