This is the story of Martin Debaeré – a former lillois musician who trained at the École Ferrandi and then bought a place along the Adour River (mismatched chairs and tables, a tiny terrace), named after his grandmother. With the help of two self-taught Ch’ti friends, Maxime Bitam and Teddy Chevalier, he serves incredible California-style cheeseburgers: the classic (the best we’ve ever tasted in Basque Country) is made on a buttery bun with American cheese, dry-aged Aquitaine beef that’s ground in-house, pickles, raw onions, iceberg lettuce, yellow mustard and ketchup; while the very crispy bacon cheeseburger comes with smoked bacon bits, minus the pickles but with added caramelized onions. Pair them all with homemade fries cooked twice in beef fat. No less incredible is the strawberry milkshake made with ice cream from Sua Bontà in Bayonne, topped with whipped cream and candied basil leaf. // Gérard Roubeix
