In Anglet, Fanny Lamazères and Jean-Paul Rougeron (both of whom used to work at Maison Plisson in Paris) have opened a luminous café-diner decked out with a white tiled bar, artisan-crafted wood tables, an open kitchen and big patio windows. Their credo? Carefully-sourced products (poultry from Aldabia, other types of meat from the Axuria co-op, organic vegetables grown in the Landes department), and fiery cuisine with Colombian accents. The other day at lunch, we devoured an arepa (a corn flour flatbread) topped with turmeric- and paprika-spiced creamed corn, paired with roasted red kuri squash, parsnips and button mushrooms, plus a side of mixed greens, pickled red onions and mustard seeds, all made even better by the aji sauce (olive oil, cilantro, scallions, tomatoes, onion and green chilies); before a classic cinnamon-spiced rice pudding topped with homemade granola (hazelnuts, pumpkin seeds, flax seeds, sesame seeds, oats, panela) and dulce de leche. During the day, make way for sweet treats: chocolate-peanut cookies, Basque cheesecake, etc. // Gérard Roubeix
FEELING THIRSTY? Clean wines from the Biarritz wine shop Retour verre le futur (a Fronton from the Château Terre Fauve at €4 a glass, a Gand Cerdo rioja (€4.50 for 330 ml), aguapanela (a Colombian ginger and lemon infusion) and tinto (“black coffee” in Colombian, €4 for unlimited filtered coffee).
