In his miniature café located in the Village Iraty-Biarritz commercial zone and decorated with a Star Wars fresco, 1970s wallpaper and artisan-made furniture, Périgord native Grégory Ther makes his pizza dough dance! Easy-peasy when you had the Sardinian-born Mario Venerdini, of Bottega di Mario in Bayonne and the prince of Neapolitan pizza, for a mentor. Fresh from the electric oven, the night we went, topped with the best of Italy and the Basque Country: an incredible Bumble Bee pizza with puffed-up crusts and tender dough topped with pecorino sardo, fior di latte, sun-dried tomatoes, mortadella, burrata and pistachios; or a tasty 4 Fro combining pecorino sardo, fior di latte, taleggio, friarielli, tomatoes and Parmesan.
