For an apéro that goes off without a hitch, head to this bright blue joint that livens up the Hossegor Lake with its 100% local oysters. Less famous than the ones from Arcachon or Charentes, these natural bivalves – something that’s rare enough to be worth pointing out – raised locally by Théo Lorenzi are simply divine, plump and have elegant briny notes. Enjoy the warm ambiance and slurp them back seated shoulder-to-shoulder while waiting for a table to open up, as you watch the sun set over the pine groves. And if you want to take things even further, there’s Bayonne ham sliced very finely, organic Gers duck rillettes from Daniel Bénédet, shrimp or whelks. // D.N.

FEELING THIRSTY? Somewhat gimmicky wines: Villa Grand Cap, a Béarn white from Lionel Osmin (€2.50 a glass) or a Côtes-de-Provenec rosé from the Château des Vingtinières (€18 a bottle).
