Le Fooding Guide’s 2014 best pizzaiole
Named the Best Pizzaiole by Le Guide Fooding in 2014, Salvatore Rotiroti has been providing North Paris with pizza pies since 2012 – topped with fiore di latte, artichokes, capicollo, mortadella with black truffles, ricotta di bufala, guanciale, shiitake mushrooms, turnips shoots from Calabria, etc. In a joyful and chaotic ambiance brought to life by his team of cheeky waiters and some old-fashioned tunes, the pizzas file out of the kitchen, all crispy around the edges. And even if the beautiful state of grace of the early years seems to have disappeared a bit, during our last visit, everything turned out fine: a very cheesy 5 Formaggi (€14), much like the Ronzatti with fiore di latte, cime di rappa, Neapolitan sausage and smoked scamorza (€17). To drink, there are patriotic wines: a Calabrian white from the Caza Ponziana (€4.50 a glass) or an organic Piedmont red from Radici e Filari (€29 a bottle). Pizzas €10-18. // E.S.
