Best sausage and mashed potatoes of 2017
A long wooden bar, mosaic tile floors, tightly-squeezed-together tables, a lively atmosphere, punchy plates… A certain faubourgeois bistro magic is very present at Les Arlots, owned by Thomas Brachet (ex-Beef Club) and Tristan Renoux (ex-Siffleur de Ballons). The day we went for lunch, the mustachioed chef (Thomas) sent out an unstoppable menu: an addictive butternut velouté with tandoori-spiced carrots and croutons; pollack roasted in the oven for a satiny sheen and served with a beurre blanc sauce, puréed parsley root and chanterelles; before pan-fried plums, plum coulis, honey-infused whipped faisselle cheese and a butter cookie crumble for the incredible dessert… At night, the famous sausage and mashed potatoes make an appearance, served à la carte alongside other respectable dishes: pâté made with four different kinds of meat, sirloin steak with potatoes sarladaise, brill Grenobloise with celery and white miso mousseline, etc. // O.J.
FEELING THIRSTY? Tristan distributes customized natural wines and advice: a mineral Saumur blanc from Arnaud Lambert or a Burgundy red from Agnès Paquet (€6.50 a glass), a Minervois from Benjamin Taillandier (€30 a bottle) or La Goujonnnière, a Touraine white from Le Sot de l’Ange (€36).
