The former head barista at Terres de Café, Joachim Morceau, opened this coffee haven in the 2nd arrondissement back in 2019. There, you’ll find a long rectangular bar and red origami on the wall, but zero pastries (there’s actually no sugar whatsoever) or music and little tolerance for chit-chat… 
The day we went, though we were only planning on ordering an espresso at the bar and leaving with a bag of coffee beans to grind at home, we were taken aback by the room full of coffee lovers of all different nationalities, who had come to listen religiously to this expert preach the gospel of Holy Java. Offering plenty of excellent advice, the owner pulls a double espresso with delicate flavors made with beans roasted behind the shop, and extracted with a Slayer espresso machine. The same sense of purity can be found in the pour-over coffee prepared using a V60, with Panama Iris Estate Enigma Geisha beans – which come with a €17 price tag, by the by… To go, there are a dozen different beans from all over: Ethiopian beans from the Nazimu Abamecha farm, Panamanian beans from the Auromar finca, Kenyan beans produced by Gondo… // Gwen Jacquère
