After traveling around England, Australia and New Zealand, then working as a sommelier at Epoq in Biarritz, wine-o-phile Hubert Lauriot Dit Prévost decided to put down roots for good. In his minimalist wine shop (a bit of shelving, two or three plants here and there, and that’s all folks!), this neo-shop-owner pampers no fewer than 300 bottles of natural wine. A random sampling: Parie Fine, a Gers white from Sébastien Fezas (€13.90 a bottle), Herrigoia, a Rioja red (€6.90), Apparente, a Gard blend from Cyril Cuche (€13.90), Petite Terre, a Merlot from Antonin Jamois (€14.90)… And if you still want more, there’s Txalaparta apple wine from the Domaine Bordatto (€10.90 a bottle) or craft beef from the Brasserie Bruel in the Landes department (€12.90).
