“Da Paride could almost be translated as ‘from Paris’!” jokes Paride Raffa, who, a few years ago, gave his name to this Sicilian pizzeria with a wood-fired oven. Just a stone’s throw from the Buttes-Chaumont, beautifully round pizzas stream out the oven, built on a thin Roman-style base that somehow manages to stay soft and fluffy, finished with a few inspired regional twists. Against a hypnotically graphic tiled counter and a soundtrack of Italian pop classics, a parade of Italian pleasures unfolds: creamy Palermo burrata lounging on a bed of arugula, chosen from the array of tempting antipasti; a show-stopping Porchetta pizza layered with mozzarella, delicious smoked scamorza, porchetta and rosemary; and a fiery Diavola with a tomato sauce base, mozzarella and spicy spianata. For the sweet finale, go big with the ricotta and pistachio cannolo (the shells are delivered weekly by a pastry chef in Ragusa) or cool things down with lip-smacking gelata artisanale from Palermo. · Maria Mariaux
