Cibus, darling, is a trattoria tucked away on Rue Molière whose dolce vita accent has been enchanting the fashion world since 2002. Here you’ll find the Neapolitan chef Elio Bombace working for a handful of insider guests (there are fewer than 20 seats) in a tiny Art Deco sala da pranzo. There’s no big menu, nothing but good organic dishes described in Italian and made with the best the Boot has to offer. The day we went for lunch: a fantastic bass and bottarga carpaccio, seasoned with fennel seeds and strips of radish, plus extremely fresh mixed greens – making for a lively and briny dish; classic sea urchin spaghetti; before a perfect tiramisu with a nice Amaretto flavor. // C.C.
