Hot stuff! Cécile Parcheminer (formerly of studio Saint-Lazare) and Thibaut Allache (ex-Aristide in Annecy and Maison Arlot Cheng in Nantes) are quietly setting the Périer neighborhood alight with their crazily good bakery, Deville. The lowdown: light concrete walls, skirt pendant lights, a pinewood counter and, most importantly, some of the hottest loaves in town, made with natural levains and flawless organic flours. Take the Deville country loaf, perfectly hydrated and pimped with late-summer apricots and figs. There are lunchtime sarnies too (grilled cheese with Comté, a jambon-beurre made with Isigny butter) plus a caffeine fix courtesy of Terres de Café beans. · Emma Yonnaise
