Located off the big boulevards, there’s a small storefront that stands out less for its decor (two potted bamboo plants, an emerald green color scheme) than for the long line of customers out front. That’s because this family-run shop serves one of the city’s best phos: a generous heaping of herbs like you’d get in Vietnam, long strips of French beef that finish cooking in the translucent and complexly flavorful broth, firm noodles… The day we went, we also ordered banh cuon, those delicate steamed dumplings stuffed with ground beef and black mushrooms and served with nuoc-mâm dipping sauce, and a lovely house specialty: ground pork and shrimp in a fermented chili paste, with small shrimp and lemongrass. All of which is served in generous enough portions to make you skip the forgettable desserts. // Alice Eugène
