This ménage à trois has got all of Bayonne talking! Hubert Lauriot Dit Prevost (who also runs Retour Verre le Futur in Biarritz), Clément Hauvette (who is also an art director) and Sophie Henri De Villeneuve (ex-Caulaincourt in Paris) took over Marie Hours’ iconic Bayonne wine bar and revamped it according to their own personal convictions. On the stoneware plates, you’ll find locally-sourced, plant-forward eats (grown at Aukera, Clément’s permaculture farm) and a little bit of Ospital charcuterie, transformed according to the good ideas of consultant chef Jessica Tanaka Noblia: roasted eggplant and pimientos, served with shiso salad; zucchini carpaccio refreshed by cucumber and sheep’s milk cheese; a relentless plate of Ossau-Iraty cheese with Loretzia black cherry jam; grilled cheese with or without the addition of Bayonne ham; or a lovely bowl of popcorn made with pork rind butter. The most insane option? A vanilla, bourbon and chocolate ice cream bar studded with cured ham. // Mathilde Moche
FEELING THIRSTY? : The awesommelier Sophie serves 150 living wines on tap (Allez Bon Vin!, a Nantes white from the Domaine Haut Planty or a red from Le Clos Siguier at €4 a glass or €15 for 750 ml to go) or à la carte: Apparente, a Cévennes rosé from Cyril Cuche (€6 a glass), or Ca Sulfit!, a local pet’ nat’ from the Domaine de l’Ancienne Cure (€39 a bottle).
