Six-Seven? More like Seven-Eight! After opening their sleek, chrome-plated coffee shop in Uccle, entrepreneurs Sasha Litvine and Kenya Hoet are now giving this slice between Sablon and Avenue de la Toison d’Or a distinctly New York twist. Here, chef Olivia Behaegel bakes a daily batch of arty sourdough bagels, sold in pairs – and never mind if your eyes aren’t quite bigger than your belly. That day’s dynamic duo? An everything bagel lavishly coated in seeds and topped with sliced avocado, cilantro, dill, sumac and chili flakes; mix ‘n’ matched with another featuring Comté cheese, juicy heirloom tomatoes, miso mayo, tarragon and chives. Room for more? There are PB&J bagels (Buddy Buddy peanut butter and tangy cherry jam) or one slathered with salted butter with dark chocolate sprinkles, plus a supporting cast of sweet treats: Pépite vegan Snickers, house-made banana bread and even cardamon buns dreamed up with Renard and twisted into a figure of eight, naturally! · Helmut Biscotti
