When Kathmandu met Paris… Mohit and Shaheen Shrestha knew exactly what they were doing, setting up this canteen with every intention of marrying Indo-Gangetic eats with decidedly French ways. Mohit, for one, had quite the schooling: arriving from Kathmandu, he landed in the kitchens of Le Chateaubriand and then Le Dauphin, turning mushrooms into duxelles and thickening sauces under Iñaki Aizpitarte’s watch. He now puts those skills to work alongside Diamond Gurung (ex-Jatra in Paris), cooking up a dialogue between his Nepali childhood and his adopted home, while opening Parisian chakras to Himalayan classics: chiura (toasted flattened rice flakes), achaar (spicy, tangy pickled meat or vegetables), paratha (flatbread) stuffed with potatoes… · Bouyaya Kitori
Ate: A puff-pastry tart loaded with mushrooms, pork achaar and kasundi (fermented mustard); a curry with beautifully charred chicken thigh; and coffee jelly swirled with whipped cream, a throwback to the Japanese dessert he used to gorge on repeat while eating out back in Kathmandu.
